DORBLU Börek (Turkish-Style Savory Pastry)

- 100 g DORBLU Classic
- 200 g fresh spinach
- 1 onion
- 1 clove garlic
- 2 tbsp. olive oil
- Salt and pepper to taste
- 10 yufka/phyllo pastry sheets (or thin puff pastry)
- 3 tbsp. melted butter or olive oil
Topping:
- 2 – 3 tbsp. sesame seeds

1) Prepare the filling
Dice the onion and mince the garlic. Heat the olive oil in a frying pan and sauté the onions and garlic until translucent. Add the spinach and cook briefly until wilted. Season to taste with salt and pepper, then allow to cool. (Tip: Frozen spinach can also be used. Thaw, then squeeze to remove excess moisture and heat thoroughly). Crumble the DORBLU Classic and stir into the spinach mixture until well combined.
2) Roll the pastries
Lay out a sheet of pastry dough and thinly brush with melted butter or olive oil. Place a tablespoonful of the filling at the bottom of the dough. First fold in the sides, then roll the dough tightly into a log. Repeat this process with the remaining pastry sheets and filling.
3) Bake the pastries
Preheat the oven to 180 °C top/bottom heat (160 °C convection). Arrange the börek sticks on a baking sheet lined with parchment paper. Brush with a little melted butter or olive oil and sprinkle with sesame seeds. Bake the börek for approx. 20 – 25 minutes until golden brown and crisp.

Tip:
Sumac gives the börek a fresh, slightly acidic note. Feel free to sprinkle some over the fresh börek sticks if desired.
