Tip: Make your own versatile and tasty thyme honey.
Thyme honey is easy to make yourself and not only pairs well with this dish, but is also excellent in tea or with a cheese platter. To make your own thyme honey, carefully heat the honey in a bain-marie (water bath or double boiler) until it thins a bit. The honey should not be heated above 40 °C. Add the fresh, washed and dried thyme sprigs to the warm honey and allow to stand for 10 minutes at the same temperature so the flavors can meld. Then transfer to a sterile jar and leave the mixture to rest in a cool place for at least two days. Finally, strain the mixture through a fine sieve. That’s it!
The intensity can be adjusted to taste. The more thyme you add and the longer the honey infuses, the more intense the flavor.
